Two Super Easy Egg White Brunch Ideas

One of my most favorite breakfasts is the diner Florentine omelet.  I have always ordered it with egg whites as I liked the lack of color with spinach and feta.  Through the years, I learned that my choosing egg whites for my omelet was a better choice for me.  Since I haven’t gone to the diner on a regular basis like I once did, I wanted to try making my favorite omelet with fresh ingredients.

 

I decided to try my omelet with Egg Land’s Best 100% Liquid Egg Whites along with fresh spinach and feta cheese. Eggland’s Best Liquid Egg Whites are a great way to get fresh egg whites from EB eggs in an easy and convenient way. EB Egg Whites contain 5g of protein and only 25 calories per serving, a good source of daily protein and a low calorie food.

INGREDIENTS

  • 1 1/2 cups egg whites
  • 3.4 cup chopped fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1/2 tsp olive oil
  • salt & pepper to taste

To start, I added 1 tsp of olive oil to my pan and once heated, added the fresh spinach to sauté.  After a few minutes, I added the egg whites to the pan.  After about 2- 3 minutes, I flipped my omelet over and added feta cheese crumbles, salt and pepper to taste. I love how fresh it tasted and how it also reminded me of my trips to the diner.

After I made my omelet, I thought wouldn’t it be great to add the same ingredients and use my mini muffin tin to make Mini Florentine Omelets.

 

This time, I preheat the oven to 350 degrees.   I sprayed the pan with olive oil spray and mixed about a cup of egg whites, spinach, feta cheese crumbles and salt and pepper to taste. Bake for about 20 minutes.

The American Heart Association Heart Check program recognizes and certifies EB Egg Whites as a heart-healthy food. Look for the logo on the package.

EB Egg Whites are available in 16oz and 32oz cartons and can be found in your grocery egg section.

My mom also came with us. We started talking and I think it was almost 40 years ago that she took us to visit Santa at Macys. I was so happy to visit Santa with her and my youngest for a three generation experience.

Conversations are super important. It’s never too early (or too late) to have these conversations with your students or your own children.

Operation Conversation is a check-in on kids’ mental health. When we start simple habits of conversations, we can learn about concerns or problems our students are dealing with, help them problem solve, and build their confidence for life’s difficult moments. 

Teachers can help to destigmatize mental health starting in their own classrooms by talking to their students about mental health using a free deck of conversation starter cards. Parents can also use these cards to support good conversations while at home. I know as a mom, I can use all the help I can get.
