I love avocados! I love them so much that there are times that I might buy too many. I love them sliced with a burger or as homemade guacomole. Recently, I have enjoyed them as part of breakfast with my eggs. I love them even more when my resident chef (aka my husband) makes something delicious with them.
Since guacomole is a family favorite, I love to have the necessary ingredients on hand to make it fresh. Not only are they delicious, they are also good for you. I think it is important to find new ways to incorporate avocados into our diet and these new recipes will help do just that.
Did you know that avocados are a good fat?
According to a survey by Fresh Avocados – Love One Today®, over 75% of the fat in avocados is unsaturated (monounsaturated and polyunsaturated fats), making them a great substitute for foods high in saturated fat.
Avocados contain naturally good monounsaturated fat and are cholesterol free. Naturally good fats are an important part of a healthy diet. Foods that are cholesterol free are important to me and my family. This is why I was so happy to host an in-home appetizer party and try out new recipes with friends and family. Great time and new ways to use my avocados sound like a perfect plan!
So versatile, fresh avocados can be used in any meal or dish. They can be used as a recipe substitute for bad fats, a way to add naturally good fats, a nutrient-dense fruit to add nutrient value, and as a vegan or vegetarian possible alternative to dairy products.
We tried out two new recipes: Vegan Avocado Ceviche and Chipotle Avocado Stuffed Cherry Tomatoes.
I love greek yogurt and blending the avocado it and seasonings gave it the perfect zest of flavor. It was delicious! My crowd raved over how it displayed. It did taste amazing in the tomatoes but this recipe is so versatile. My husband had made extra so later in the party we enjoyed it as chipotle avocado dip with chips.
Calling all vegan and those who love delicious tasting ceviche! The minute this bowl hit the table, it was gone! So many veggies that were full of flavor paired with a tortilla chip made this a perfect party app.

We were so glad that ran let up so that we could head outdoors to enjoy our get together.
