My Jenny Craig journey continues. Staying on track during the summer can be a challenge. Finding summer recipes can help you make better choices while attending barbecues and summer festivities.

This past 4th of July, I used two Jenny Craig recipes to keep me on track. The Sweet Potato Fries were delish and so easy to make. While enjoying the day, I forgot to take pics, but take my word for it – this recipe is a simple way to stay on track.
Sweet Potato Fries
Prep Time: 5 minutes / Cook Time: 30-40 minutes
• 1 large sweet potato, peeled and cut into 1/2 inch
strips
• butter-flavored nonstick cooking spray
• salt and pepper to taste
Preheat oven to 450ºF. Spread sweet potato wedges
onto a baking sheet coated with butter-flavored nonstick
cooking spray. Bake for 15-20 minutes or until brown on
bottom, turn sweet potatoes over and continue baking
another 15-20 minutes, until tender and brown. Top with
salt and pepper, if desired. Yield: 2 servings.
This next recipe was a great way to add a lot of tasty veggies to your diet. I am going to make this again!
Rainbow Pepper Salad
Prep Time: 10 minutes / Cook Time: 0 minutes
• 3/4 cup chopped red, green and yellow bell pepper
• 1/4 cup chopped red cabbage
• 2 Tbls diced green onion
• 1/8 tsp crushed basil
• 1/8 tsp minced garlic
• 1 Tbl white wine vinegar
• 1/2 tsp olive oil
•
Combine all ingredients in a bowl and mix well. Chill for 1-3 hours. Yield: 1 serving.

I loved this program!
I sometimes feel nervous about trying new recipes because Ive had a few bad experiences in the past. This recipe looks so inspiring though, and it seems easy enough to understand. The hardest part for me has always been the presentation of the food; I really hope I can get mine to look as appetizing as yours. Jenny C is new to me.. I mean I’ve heard of it but never tried any of the foods. First time for everything! Thanks a lot
